Potato Salad with Lemony Dressing

Directions

  1. Put the potatoes in a pot of boiling water and simmer for 12-15 minutes or until tender. Drain and cool under running cold water, cut into 1 cm thick slices.
  2. Mix together the lemon zest, juice, and mustard. Slowly whisk in the North Coast Naturals Organic EFA 369 Oil Blend or North Coast Naturals Organic Hemp Oil.
  3. Toss potatoes with dressing and sprinkle on the green onions.
